Cream Cheese

Our Cream Cheese is made Fresh as an ingredient only exclusively for our Cheesecakes, using Locally Sourced Dairy Farm Grade A Pasteurized Whole Milk blended with Pasteurized Extra Heavy 40% Cream. None of the Dairy products are Ultra-Pasteurized.  Our Cream Cheese is created with a Blend of Probiotic Cultures, NO Animal Rennet, NO Lactic Acid, NO Sorbic Acid, NO Artificial Preservatives.

After our Milk/Cream has been Incubated for a while, we add Salt and Organic St. Johns Bread aka Locust/Carob Bean Gum.  Why Locust/Carob Bean Gum? Its a Natural Stabilizer in use for thousands of years dating back to the Egyptians.  Why does Cream Cheese need a Stabilizer? In simple terms without it, the cream cheese will weep left over whey or appear to melt. It will cause a cheesecake to actually melt, lose structure and cause a soggy crust. This process is called Synerersis.

Synerersis describes liquid oozing out of a large number of foods such as jams, jellies, sauces, ketchup, dairy products including yogurt, sour cream, cream cheese and tomato juice, as well as meat and soybean products.  For example, when you open a ketchup bottle, turn it upside-down over your fresh Hot fries. Ugh, a thin stream of orange water runs out and makes your fries soggy! That's Synerersis.

Synerersis causes liquid to appear on top of Yogurt, water to leach from pudding, cooked eggs at a buffet to sit in a puddle.  Synerersis is undesirable and needs to be controlled, thus the addition of a Stabilizer.
